1. Wild Rice Stuffing
Note: Inspired by Food Network and Martha Stewart. This stuffing can be used for poultry or baked squash.
2 t orange peel, grated
2 cp water or chicken stock
1/2 cp wild rice
3/4 cp celery, diced small
3/4 cp onion, diced small
1 T sage
1 bay leaf
1 cp green apples, peeled, cored and diced small
or
1/2 cp dried cherries
1/2 cp walnuts, toasted
fresh lemon or orange peels for garnish
fresh ground pepper to taste
1. Bring rice to boil in water, add bay leaf, and simmer 35-40 minutes or till tender.
2. Saute onions till translucent, then add celery, sage and apples or cherries for 2 minutes.
3. In large bowl, add walnuts, black pepper, and cooked wild rice to mixture.
4. Stuff a small roasting chicken and roast it as directed, depending on weight. Or, use to stuff baked
zucchini or acorn squash.
